Lemon-Coconut Dessert Recipe

Ingredients
11/4 c. flour
1 1/4 c. coconut
1 1/2 c. sugar
3 soda crackers, crushed
Butter
2 tbsp. cornstarch
Juice and grated rind of 1 lemon
1 egg
Directions
Mix flour, coconut, 1 cup sugar and crumbs; cut in 3/4 cup butter.
Pat half the mixture into 9 x 9-inch cake pan.
Mix remaining sugar, 1 teaspoon butter, cornstarch, lemon juice and rind and egg; add 2 1/2 cups boiling water.
Stir mixture thoroughly.
Pour lemon mixture over crumb mixture.
Sprinkle remain- ing crumb mixture evenly over filling.
Bake at 350 degrees for 20 minutes or until lightly browned.
