5 pounds boned lamb shoulder, rolled and tied
Salt and pepper
1 lemon, sliced
Whole cloves
2 tablespoons honey
Directions
Place lamb on rack in shallow roasting pan; sprinkle with salt and pepper.
Bake in moderate oven (325°F.) 2 hours.
Place lemon slices on lamb, securing each one with cloves.
Drizzle honey over lamb; continue baking 30 to 60 minutes or until meat thermometer registers 175°F, to 180°F.
