Lemon Caraway Cookies Recipe
Ingredients
1 egg
1 cup sugar
2 tablespoons lemon juice
2 teaspoons caraway seeds
1/2 Cup butter or margarine (softened)
2 1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
Directions
Beat egg until foamy, then gradually add sugar, then lemon juice, caraway seeds and butter.
Stir just to blend.
Gradually add dry ingredients which have been sifted together.
Shape in 2 rolls and wrap in waxed paper.
Chill overnight or longer.
Slice thin and bake at 325° on ungreased cookie sheets, about 7 minutes or until edges are lightly browned.
Remove at once and cool on rack.
