This will work for any thin, flaky white fish fillets, but Sole is the traditional choice. We topped the fish with is a simple lemon, caper butter sauce. I will also demo this on the site and you would be well-served to learn this classic and versatile sauce.

This has to be the easiest “gourmet” method for serving fish or simply steamed artichokes or asparagus. Chef John makes a delicious versatile lemon beurre blanc sauce using three simple ingredients; lemon juice, capers and butter. This lemon butter sauce goes fantastically with any food that is compatible with lemon.

I think this sauce will be perfect to finish off a flounder dish I am planning. Because this is a dinner party, can the sauce be prepared ahead of time and warmed through when serving? Any advice would be much appreciated. Jeff
