Lemon Banana Oat Bran Muffins Recipe
Lemon banana oat bran muffin is one of my favorite healthy muffin recipe to bake in the summer. The ripe mashed bananas and the lemon juice complement the other's flavor perfectly. These little lemon banana muffins bake up perfectly light and moist.
Ingredients
1 1/2 cups all-purpose flour 375 mL
3/4 cup Oat Bran cereal 175 mL
1 tsp baking soda 5mL
1/2 tsp salt 2mL
1 cup granulated sugar 250 mL
1/2 cup margarine or butter 125 mL
1 cup mashed ripe bananas 250 mL
2 eggs
1/2 tsp grated lemon zest 2mL
1/3 cup milk 75 mL
1 tsp lemon juice
Directions
In a bowl combine flour, cereal, baking soda and salt.
Mix together well.
In a large bowl, cream together sugar and margarine until light and fluffy.
Stir in bananas, eggs and zest.
In another bowl, combine milk and juice.
Add to banana mixture alternately with flour mixture, stirring after each addition.
Fold in nuts.
Spoon batter into prepared muffin tin, filling cups to the top.
Bake in preheated oven for 15 to 20 minutes.
