Lemon-Avocado Soup Recipe
Ingredients
1 large ripe avocado
2 8-ounce containers lemon yogurt
1 cup milk
3 tablespoons minced scallions
1/2 teaspoon salt Fresh mint leaves for garnish
Directions
Peel avocado, remove pit and cut into chunks.
Combine chunks in blender with yogurt, milk, scallions and salt; blend until smooth.
Garnish with mint leaves.
