Lemon Avocado Soup Recipe

Ingredients

 
2 medium avocados
 
1 to 2 teaspoons finely grated lemon zest
 
2 to 3 tablespoons lemon juice
 
450 ml/3/4 pint vegetable or chicken stock
 
150 1/4 pint single cream or yogurt or fromage frais
 
Salt and ground black pepper

Directions

Halve the avocados, remove the stones and the peel.
Either mash them with the lemon zest and juice or liquidize with all the ingredients.
The amount of lemon juice is a matter of personal taste.
If mashing the fruit, gradually add the stock and cream, or yogurt or fromage frais, beating briskly to give a smooth texture.
This soup looks most colourful if garnished with finely chopped spring onions and/or finely diced raw tomatoes.
Add the garnish at the last minute.
