Lemon And Peach Delight Recipe
Ingredients
1 packet (100 grams) lemon jelly
1 large can (850 grams) peaches
200 grams (7 oz.) fresh cream (approx.), juice of 1 lemon
1 to 2 tablespoons powdered sugar
Directions
1. Dissolve the jelly in 2 teacups of boiling water. Cool.
2. Rinse a ring-mould with water. Arrange a few peach halves at the bottom, pour a little lemon jelly over them and put to set in the refrigerator.
3. Pour the rest of the jelly into another vessel and put to set in the refrigerator. When almost set, take out and break up the jelly.
4. Beat the cream.
5. Add to the broken jelly, the lemon juice, sugar, 1 teacup of beaten cream and 1 teacup of chopped peaches. Mix well.
6. Pour into the ring-mould and put to set again in the refrigerator.
7. When set, dip the mould in hot water for a few seconds and invert on a plate. Decorate with the remaining peaches and cream and keep in the refrigerator till required.
