Lemon 'Tarts Recipe

Ingredients
For Pastry:
Maida - 200 gm
Salted butter - 100 gm (or salt free butter+ 1/4 tsp. salt).
Cold water - 5-6 tbsp
For Filling:
Condensed Milk - 1 tin
Lemon - 1, large
Rind of lemon - 1/2
Lemon yellow color - few drops
Cherries - for decoration
Directions
GETTING READY
1 Preheat the oven to 180 C.
2 Lightly grease tart cases.
MAKING
3 For the pastry, cut cold butter into small pieces.
4 In a bowl, add the maida and rub in the cold butter pieces using a palette knife.
5 Sprinkle the maida with cold water and gather the mixture into a ball using a palette knife.
6 Roll into 1/8th inch thickness.
7 Cut out rounds using a cutter, ½ inch more than the diameter than the tart case.
8 Line the prepared tart cases with pastry.
9 Place in the oven and bake blind for 10 to 15 minutes.
10 Meanwhile, prepare the filling, in a bowl add condensed milk leon juice and rind together.
11 Add in a little color and mix well.
12 Remove the tarts from the oven and allow to cool.
FINALIZING
13 Fill the tarts with the prepared filling.
14 Top with cherries and lemon rind.
SERVING
15 Serve at once.
