Ingredients

 Tenderloin1/2 Pound, sliced
 16 mushroom caps, cleaned
 1 yellow pepper, in large pieces
 Olive oil1/4 Cup (16 tbs)
 Wine vinegar1/4 Cup (16 tbs)
 Tarragon1 Tablespoon, chopped
 2 broccoli stalks, cubed and cooked
 1/2 red onion, in large pieces
 Juice 1 lemon

Directions

Place veal, mushrooms and pepper in bowl.
Sprinkle in oil, vinegar, tarragon and lemon juice.
Refrigerate 35 minutes.
Drain and reserve marinade.
Alternate veal (fold each piece in 2), mushrooms, yellow pepper, broccoli and onion on skewers.
Place in ovenproof dish and pour marinade over skewers.
Broil 12 minutes in oven 6 in (15 cm) from top element Turn skewers over once.
