8 - 10 tilapia fillets
 
4 teaspoons smoked salt (I like Alderwood)
 
1 - 2 teaspooons cayenne pepper
 
2 - 3 lemons, thinly sliced
 
olive oil- 2 tablespoon

Directions

Preheat oven to broil. Coat the bottom of a roasting pan with olive oil. Arrange fish, turning in oil.

Sprinkle about 1/2 teaspoon of smoked salt on each fillet. Dust fillets with cayenne. Arrange lemon slices on top and broil 15 minutes. Remove from oven and press down on lemon slices with a fork for extra lemon flavor. Discard rinds.Trim the excess fat off the back of the duck legs. Arrange in a roasting pan. Sprinkle generously with coarse salt. Cover with heavy foil and refrigerate for two days.

Preheat oven to 325 degrees. Rinse all the salt off the duck legs and return to pan. Sprinkle tops with pepper, herbs de Provence and cloves. Roast 2 hours, uncovered.
