Lemon Swordfish Recipe
Lemon swordfish is a grill cooked swordfish recipe. Prepared with a marinade of lemon juice and oil flavored with garlic and herbs like parsley, balyleaf and thyme, the swordfish is cooked over coals with frequent marinade baste, till flaky and done.
Ingredients
1 tablespoon grated lemon peel
3/4 cup fresh lemon juice
3/4 cup olive or vegetable oil
1/4 to 1/2 cup parsley, chopped
2 tablespoons prepared horseradish
2 cloves garlic, minced
1 teaspoon dried thyme, crushed
1 teaspoon salt
1/4 teaspoon pepper
1 bay leaf
1 1/2 pounds swordfish steaks
Directions
In shallow glass dish, combine all ingredients except fish.
Add swordfish; turn to coat with marinade.
Cover and refrigerate at least 2 hours, turning fish occasionally.
Drain fish; reserve marinade.
Grill swordfish, on uncovered grill, over medium-hot Charcoal Briquets about 7 minutes, basting lightly with marinade.
Carefully turn swordfish and grill 5 to 6 minutes longer or until fish flakes easily when tested with fork, basting lightly with marinade.
