Lemon Squares Recipe
Ingredients
| Sweetened condensed milk | 1 15 Ounce | |
| Lemon juice | 1/2 Cup (16 tbs) | |
| 1 t. lemon rind, grated | ||
| Flour | 1/2 Cup (16 tbs), sifted | |
| Baking powder | 1 Tablespoon | |
| Salt | 1/2 Tablespoon | |
| Butter | 2/3 Cup (16 tbs) | |
| Brown sugar | 1 Cup (16 tbs) | |
| Oatmeal | 1 Cup (16 tbs), uncooked | |
Directions
Blend first three ingredients and set aside.
Sift together - flour, baking powder, salt.
Cream shortening and blend in sugar.
Add flour mixture and oatmeal, blend until crumbly.
Put one half of crumbly mixture in 8" x 12" x 2" buttered pan.
Spread condensed milk mixture over, and then cover with remaining crumbly mixture.
Bake at 350 degrees about 25 minutes or until brown at edges.
Cool at room temperature for 15 minutes and cut into squares.
Chill until firm.
