Ingredients

 
4 egg whites
 
6 tbsp. confectioner's sugar
 
4 egg yolks
 
2 tbsp. lemon juice
 
Few grains salt
 
1 tbsp. lemon rind

Directions

1. Beat the whites until stiff and the yolks until thick and light colored.
2. Beat the salt, sugar and lemon juice gradually into the egg yolks.
3. Fold into the beaten whites.
4. Pour into a buttered baking dish; set the dish in a pan of hot water.
5. Bake in a moderate oven until the center is firm to the touch when pressed lightly with the forefinger.
