Ingredients

 
3 cups flour
 
1 teaspoon baking powder
 
1/2 teaspoon baking soda
 
1/2 teaspoon salt
 
2 tablespoons sugar
 
1/3 cup soft butter
 
2 tablespoons lemon rind
 
1/4 cup lemon juice
 
3/4 cup buttermilk
 
1 egg, separated

Directions

Preheat oven to 425° F.
Grease baking sheet.
In bowl, combine dry ingredients.
With pastry blender, cut in butter until well blended.
Add lemon rind, juice, buttermilk, and egg yolk; mix well.
Toss on lightly floured board; knead 30 seconds.
Roll to 1/4 inch thick; cut with diamond cookie cutters.
Place on prepared sheet; brush with egg white and sprinkle with additional sugar.
Bake 10-12 minutes.
