Microwaved Lemon Sauce Recipe
This Lemon Sauce has been my weakness ever since I tried it for the first time with spicy gingerbread pancakes at a friend's place. Try this Lemon Sauce in your own way and tell me what you like it best with.
Ingredients
1 tablespoon cornstarch
3/4 cup sugar
3/4 cup hot water
2 egg yolks
1 tablespoon butter or margarine
3 tablespoons lemon juice
1/8 teaspoon salt
Directions
1. Combine cornstarch and sugar in a 1 -quart glass measuring pitcher; add water and mix well. Cook uncovered in microwave oven 2 minutes at High; stir frequently.
2. Beat egg yolks and add a small amount of hot mixture to egg yolks, then blend into mixture in measuring pitcher. Cook uncovered in microwave oven 1 minute at High, or until thickened.
3. Remove from oven. Add butter, lemon juice and salt to sauce; beat until blended.
