Lemon Pudding Recipe

Ingredients
1 env. unflavored gelatin, unsweetened
2 tsp cold water
1/2 cup boiling water
1 1/2 cup nonfat buttermilk
2 tsp lemon rind
2 tsp lemon juice
2 tsp concentrated aspartame
2 drops yellow food coloring (optional)
Directions
In a large mixing bowl, sprinkle the gelatin over the cold water to soften.
Let sit for a few minutes.
Pour boiling water over it and stir until completely dissolved.
Add the remaining ingredients and whisk together.
Pour into five individual pudding dishes that have been sprayed very lightly with nonstick cooking spray.
