Lemon Pepper Fillets Recipe
Ingredients
| Green Pepper- 1/2 medium-sized, seeded and chopped | ||
| Lemon juice | 2 Tablespoon | |
| Tomato juice | 1/4 Cup (16 tbs) | |
| Onion powder | 1/2 Teaspoon | |
| Cod fillets | 1 pound | |
| Salt | 1 Teaspoon | |
| Pepper | 1/2 Teaspoon | |
| Butter | 1 Tablespoon | |
Directions
GETTING READY
1) Preheat the oven to 400°F.
2) Coat the bottom of a baking pan with butter.
3) Arrange the fish in the baking dish.
4) Season with salt and pepper.
MAKING
5) In a blender, mix together lemon juice, tomato juice and onion powder.
6) Blend the mixture until pureed.
7) Gently stream the lemon juice mixture over the fish.
8) Bake the fish in the oven for 10 minutes or until the fish flakes off easily with the fork.
SERVING
9) Place the fish on the serving plate carefully and garnish with lemon slices if desired.
