2 eggs
1/3 cup oil or melted butter
1/2 cup warmed honey
1/4 cup buttermilk
11/2 tablespoons grated lemon peel
1 1/2 cups whole wheat pastry flour
1 teaspoon salt
3/4 teaspoon soda
1/2 cup chopped nuts
2 tablespoons honey
2 tablespoons lemon juice
2 tablespoons grated lemon peel
Directions
Preheat oven to 350° F.
Butter a baking pan approximately 8 x 12 x 1 inches.Beat eggs in a large bowl.
Add oil or cooled, melted butter, honey, buttermilk, and lemon peel.
Mix until thoroughly combined.
Stir together flour, salt, and soda, making sure there are no lumps in the soda.
Add to the egg mixture and beat well.
Stir in chopped nuts.
Bake in prepared pan for 20 to 25 minutes.
Cool 5 minutes, then pour a mixture of remaining honey, lemon juice, and peel over top.
Cut into squares and serve warm or at room temperature.
