Lemon Granita Recipe

Ingredients
2 cups water
1 cup sugar
4 large lemons
Directions
1. In 2-quart saucepan over high heat, heat water and sugar to boiling. Reduce heat to medium; cook 5 minutes.
2. Meanwhile, from lemons, grate 2 teaspoons peel and squeeze 3/4 cup juice.
3. Stir lemon peel and juice into sugar syrup; pour into 8" by 8" baking pan. Cover with foil or plastic wrap; freeze, stirring occasionally, until firm, about 5 hours.
4. To serve, let granita stand at room temperature 15 minutes to soften slightly. Then, with spoon or ice cream scoop, scrape across surface of granita to create pebbly texture; spoon into bowls.
