Lemon Gingerbread With Peaches Recipe

| Lemon peel | 1 Tablespoon | |
| Peaches | 1 Can (10oz), sliced | |
| Cornstarch | 2 Tablespoon (Lemon Sauce:) | |
| Sugar | 1/3 Cup (16 tbs) (Lemon Sauce:) | |
| 1/3 cup lemonade concentrate | ||
| Water | 2/3 Cup (16 tbs) (Lemon Sauce:) | |
| Lemon peel | 1 Tablespoon, grated (Lemon Sauce:) | |
| Lemon juice | 1 Teaspoon (Lemon Sauce:) | |
Directions
GETTING READY
1) Preheat oven to 350F (175C).
2) Use a 9-inch square baking pan to spray with vegetable cooking spray.
3) In a large bowl place brown sugar, molasses and margarine. Pour in boiling water and combine all together thoroughly.
4) Stir in egg substitute and gradually add remaining ingredients except peaches, beat until smooth.
MAKING
5) Pour the batter in the prepared pan and place inside oven to bake for 40 minutes.
6) Allow cooling to cut into pieces.
SERVING
7) To serve, top with peaches and Lemon Sauce.
