Lemon Garlic Cornish Hens Recipe

Ingredients
6 cloves garlic, minced
1/4 cup plus 2 tablespoons lemon juice
2 Cornish hens (1 1/4 pounds each), split and skinned
1/2 teaspoon black pepper
1 teaspoon sugar
Directions
1 ln a small bowl, mix the garlic with 1/4 cup of the lemon juice, then rub the mixture overthe hens.
Coverthe hens with plastic food wrap and let them marinate in the refrigerator for 2 hours.
2 Preheat the broiler, setting the rack 8 inches from the heat.
Sprinkle the hens with the pepper, then arrange them on a broiler pan.
Broil for 8 minutes, turn the hens over, and broil 7 to 8 minutes longer or until the juices run clear when a thigh is pricked with a fork.
If the hens start to overbrown, tent them with aluminum foil.
3 Meanwhile, in a small bowl, combine the remaining 2 tablespoons of lemon juice and the sugar.
