Simple Lemon Filling Recipe
Ingredients
| Granulated Sugar | 2/3 Cup (16 tbs) | |
| Cornstarch | 3 Tablespoon | |
| Water | 2/3 Cup (16 tbs) | |
| 2 egg yolks, slightly beaten | ||
| Butter/Margarine | 1 Tablespoon | |
| 2 teaspoons grated lemon rind | ||
| Lemon juice | 1/4 Cup (16 tbs) | |
Directions
1. Combine sugar and cornstarch in small saucepan. Stir in water.
2. Cook, stirring constantly, until mixture thickens and bubbles, 1 minute. Remove from heat.
3. Beat half the hot sugar-cornstarch mixture into beaten egg yolks; stir back into saucepan. Cook 1 minute longer.
4. Stir in butter, lemon rind and juice. Place piece of plastic wrap directly on filling to prevent skin from forming. Chill until ready to use.
