Holiday Lemon Filling Recipe

Ingredients

 
3/4 cup sugar
 
2 tablespoons cornstarch
 
3/4 cup cold water
 
2 slightly beaten egg yolks
 
1 teaspoon grated lemon peel
 
3 tablespoons lemon juice
 
1 tablespoon butter or margarine

Directions

In saucepan combine sugar, cornstarch, and dash salt; gradually stir in cold water.
Stir in egg yolks, lemon peel, and juice.
Cook and stir over medium heat till thickened and bubbly.
Boil 1 minute; remove from heat.
Stir in butter or margarine.
Cool to room temperature without stirring.
