Rind and juice of 2 lemons
2 oz. butter or margarine
3 eggs
8 oz. sugar
Directions
Grate the lemon rind and strain the juice.
Beat the eggs slightly.
Put all the ingredients in a pan and cook slowly over boiling water until the mixture thickens slightly.
It will thicken more when it cools.
If required for keeping pour at once into hot, sterilized jars and seal while hot.
