Lemon Cranberry Tuna Salad Sandwiches Recipe
Ingredients
| 1/3 cup fat-free mayonnaise | ||
| 1/4 cup low-fat sour cream | ||
| 1/4 cup sweetened dried cranberries, coarsely chopped | ||
| Dill | 1 Tablespoon, chopped | |
| Ground black pepper | 1/2 Teaspoon | |
| 1/4 teaspoon grated lemon rind | ||
| Lemon juice | 1 Teaspoon | |
| White tuna | 1 Can (10oz), drained | |
| Basil leaves | 8 | |
| 4 (2-ounce) kaiser rolls, sliced in half horizontally | ||
| Cucumber | 1 Small, sliced | |
| 8 Bibb lettuce leaves | ||
Directions
1. Combine first 7 ingredients in a medium bowl; stir in tuna.
2. Place 2 basil leaves on bottom halves of each roll; top basil leaves evenly with tuna mixture. Top each sandwich with cucumber slices, 2 lettuce leaves, and tops of rolls.
