Easy Lemon Cookies Recipe

In small mixing bowl, using electric mixer, combine all ingredients except flour, beating until light and smooth; add flour and beat until flour has been incorporated and mixture forms sticky batter.
Using wet hands, roll batter into 8 small balls (about 1 tablespoon batter for each ball); arrange balls on nonstick baking sheet, leaving about 2 inches between each.
Using tines of fork, lightly press each ball down to flatten, then press down lightly in opposite direction to create a checkerboard pattern.
Transfer baking sheet to lowest oven rack and bake until edges of cookies are lightly browned, about 15 minutes; using a spatula, remove cookies to wire rack to cool.
