Add sugar and whisk until mixture turns white.
Add beaten egg, lemon juice, grated lemon peel and sifted flour.
Flatten dough to a thickness of 1/4 inch on a board coated with flour.
Coat one side with granulated sugar.
Grease paper with salad oil and arrange half of cookies on it with sugared side up.
Microwave, uncovered, 3 minutes, 30 seconds on high.
Repeat with remaining half.
