Easy Lemon Cookies Recipe
Ingredients
2 egg yolks
2 tablespoons honey or maple syrup
Grated peel of 1 lemon
1/4 cup sifted whole wheat pastry flour
2 tablespoons potato starch
1 teaspoon ground almonds
2 egg whites, beaten stiff
Directions
Preheat oven to 325° F.
Cream together egg yolks and honey or maple syrup until very smooth and thick.
Add lemon peel.
Combine flour, starch, and almonds and add to first mixture.
Beat well.
Fold in egg whites.
Drop by the rounded teaspoonful onto parchment-lined cookie sheet, about 2 inches apart, and bake for about 18 minutes.
Cool on wire rack and store in cookie tin.
