Ingredients
| 2 small bunches cherry tomatoes on the vine | ||
| Olive oil | 1 Tablespoon | |
| 2 x 140 g/5 oz chunks skinless cod or other white fish fillet | ||
| Zest 1 lemon, plus juice of 1/2 | ||
| 1/2 a 480 g pack frozen soya beans | ||
| Garlic | 1 Clove (5gm) | |
| Bunch basil, leaves and stalks separated | ||
| 100 ml/3 1/2 fl oz chicken or vegetable stock | ||
Directions
GETTING READY
1. Preheat the oven to 200C/fan 180C/gas
MAKING
2. In a baking tray, add tomatoes, rub in some oil and seasoning and roast for five minutes until the skins begin to split
3. Add fish to the tray, top with most of the lemon zest and some seasoning and drizzle some oil; roast for ten minutes till flaky
4. In a pan, boil water and cook the beans in ti for three minutes till just tender; drain and tip into food processor with oil, garlic, basil stalks, lemon juice
5. Pulse to give a thick, coarse puree and add seasoning to it
SERVING
6. Divide the tomatoes between two plates and mash it; top with the cod, sprinkle basil leaves and rest of the lemon zest to serve
