Lemon Barley Water Recipe
Ingredients
| 1/2 cup pearl barley | ||
| Pared rind of 4 large lemons, in long strips | ||
| Sugar | 2/3 Cup (16 tbs) | |
Directions
Put the barley and lemon rind into a large saucepan.
Pour 2 1/2 quarts of boiling water over.
Return to a boil, then lower the heat, cover the saucepan and simmer for 1 1/4-1 1/2 hours, until the barley is soft.
Remove from the heat and leave to cool for about 15 minutes, then strain the liquid.
Stir in the lemon juice and add sugar to taste.
Leave to cool completely, then cover and refrigerate.
Serve diluted to taste with cold water (or gin or dry vermouth) and ice cubes.
