Lemon Bar Bites Recipe
Ingredients
| 1/2 pound unsalted butter, at room temperature | ||
| Granulated Sugar | 1/2 Cup (16 tbs) (For the Crust:) | |
| Flour | 2 Cup (16 tbs) (For the Crust:) | |
| Kosher salt | 1/8 Teaspoon (For the Crust:) | |
| 6 extra-large eggs at room temperature | ||
| Granulated Sugar | 3 Cup (16 tbs) (For the filling:) | |
| Lemon zest | 2 Tablespoon, grated (For the filling:) | |
| Lemon juice | 1 Cup (16 tbs), squeezed (For the filling:) | |
| Flour | 1 Cup (16 tbs) (For the filling:) | |
| Confectioners' sugar, for dusting | ||
Directions
Preheat oven to 350 degrees.
For the crust cream together the butter and sugar and then add in the flour and salt. Place the mixed dough onto a floured board and gather into a ball. Then flatten out into a well greased 9 x 13 x 2 baking dish, making sure to push the dough up on the sides slightly.
Place into the oven for 18-20 minutes or until lightly golden brown. Take out of the oven and allow to cool on a wire rack.
Combine all the ingredients for the filling and place it on top of the crust. Place back into the oven for 30-35 minutes or until custard has set.
Allow for the dessert to cool completely and then cut into bite size pieces and dust liberally with confectioners’ sugar. Enjoy!
