Lemon Almond Cookies Recipe
Ingredients
8 oz. sugar-free lemon cake mix
1 tsp grated lemon peel
1/2 tsp lemon juice
1/2 tsp almond flavoring
2 tsp water
1/4 cup slivered almonds, toasted
Directions
Use a vegetable spray to lightly grease the cookie sheets.
Combine lemon cake mix, lemon peel, lemon juice, almond flavoring, and water in a small bowl.
Use a fork to completely blend.
Mix in slivered almonds.
Mixture will be large moist crumbs.
Lightly dust hands with flour.
Form into 30 balls.
Place balls on cookie sheets.
Bake at 350°F (175°C) for 10 to 12 minutes.
Allow cookies to cool slightly on sheets before removing.
