Lei Day Salad Recipe
Ingredients
| Pineapple juice | 1 Can (10oz), sliced | |
| 1/2 cup pineapple-flavored yogurt | ||
| Chutney | 1 Tablespoon, chopped | |
| Lime juice | 1 Teaspoon | |
| 1/8 teaspoon ground ginger salad greens | ||
| Papaya | 1 , sliced | |
| Strawberries | 1 Cup (16 tbs), halved | |
| 2 cups honeydew balls | ||
| Banana | 1 Large, sliced | |
Directions
Drain pineapple, reserving 2 tablespoons juice.
Blend together pineapple juice, yogurt, chutney, lime juice and ground ginger.
Arrange salad greens on a large serving platter.
Arrange sliced pineapple, papaya, strawberry halves, honeydew balls and sliced banana in sections on greens.
Serve with dressing
