Leg Of Lamb Neapolitan Recipe
Leg Of Lamb Neapolitan! This is a wonderful lamb dish that is well flavored and tasty. It is my personal favorite. Try these Leg Of Lamb Neapolitan at home and I am sure you will get addicted to it!
Ingredients
1 5 lb. leg of lamb
2 tsp. salt
1 tsp. oregano, crushed
4 med. onions, chopped
1 med. green pepper, chopped
1 clove garlic, crushed
1 1 lb. 12 oz. can tomatoes
Directions
Sprinkle lamb with salt and oregano; place on rack in shallow roasting pan.
Bake at 325 degrees for 1 hour and 30 minutes; drain off drippings.
Combine onions, green pepper, garlic and tomatoes; baste lamb with some of tomato mixture.
Bake for 1 hour or until meat thermometer registers 175 degree s for medium doneness, basting occasionally.
Add water to sauce, if needed during latter part of cooking time.
Serve roast with sauce.
