2 pound leg of veal, boned and tied
1/2 garlic clove, minced
1 teaspoon salt
1/2 teaspoon pepper
2 carrots, diced
2 onions, quartered
1 fresh bay leaf
1/8 teaspoon thyme
1/2 cup white wine
1/4 cup butter, melted
Directions
1) Mix together the garlic, salt, and pepper and rub into the veal.
2) Place the seasoned veal in a roasting pan and roast in a 375 degree oven for 20 to 25 minutes.
3) Drain the fat. Add the carrots, onions, bay leaf, wine, and melted butter. Reduce the oven temperature to 300 degrees and continue to roast for another 1 1/2 to 2 hours longer, or until meat is tender. Baste often.
