2 pounds small onions
2 tablespoons virgin olive oil
Fresh ground pepper
Salt
4 tomatoes

Directions
1. With a small paring knife make tiny slits under the skin of the lamb and put garlic slivers in each slit.
2. Brush the lamb with the olive oil, season, and place in a roasting pan.
3. Roast lamb in a preheated 425°F oven, basting occasionally. Figure about 1 5 minutes per pound or until meat thermometer shows 160°F.
4. Peel the onions and place into the pan 25 minutes before cooking time is up.
