Ingredients

 
Turkey,skinned & trimmed
 
Turkey bones
 
1 lg. onion
 
1 carrot
 
Fresh parsley
 
10 c. of water
 
2 peppercorns
 
1/2 tsp. salt
 
1 c. sliced mushrooms
 
2 c. shelled peas
 
3/4 c. rice
 
Stuffing
 
Salt
 
Pepper

Directions

In a soup kettle,place turkey,bones,skin,onions,carrot,parsley,peppercorn,water & lastly salt.Cover it & let it simmer it for a good 2 hours & then cool it off.Remove floating fat from the kettle,strain it & remove bones from it.Pour the stock back in the kettle & add peas,mushrooms,rice & turkey,cover it & simmer for 30 minutes over low heat.Add salt & pepper to taste.
5 mintues before you serve add the stuffing cut into pieces.
