Classic Leftover Chicken Recipe

Left over chicken is just perfect for chicken fried rice. It is a quick and easy complete meal in itself. A lazy Sunday when you don’t want to spend the day in the kitchen is just right for making fried rice. Done in no time it is a meal that you would absolutely relish.

Ingredients

 
2 cups long grain rice (cooked the previous day and refrigerated)
 
2 cups chicken (shredded)
 
½ cup finely chopped onions
 
¼ cup chopped carrots
 
¼ cup shredded cabbage
 
¼ cup finely chopped beans
 
2-3 tbsp spring onions
 
1 stem celery
 
2 tbsp cooking oil
 
Salt to taste
 
2 pinches pepper powder
 
2 tbsp soy sauce
 
½ tsp vinegar

Directions

Take a wok and add the oil. Add in the onions and other vegetables. Stir for 2-3 minutes. Add in the rice and chicken and mix well. Add the soy sauce, vinegar, salt and pepper. Mix well. Sprinkle with the chopped spring onions and finely chopped celery. Serve.
