Leftover Beef Casserole Recipe
The leftover beef casserole can be prepared with leftover beef. Diced and combined with mushrooms and tomatoes, the beef is simmered and seasoned along with noodles. Topped with parmesan cheese in a casserole the left over beef casserole can be served with mashed potatoes and vegetables.
Ingredients
3 c. leftover beef, diced
1 to 1 1/2 c. onions, thinly sliced
1 green pepper, cut in strips
1/4 c. shortening
2 3 oz. cans sliced mushrooms
4 tomatoes, cut in chunks
3 c. thin brown gravy
4 oz. noodles
1 tsp. salt
1/4 tsp. pepper
Grated Parmesan cheese
Directions
Saute beef with onion and green pepper in shortening.
Add mushrooms and tomatoes; simmer a few minutes.
Add gravy.
Cook noodles in boiling salted water according to package directions.
Drain and combine with beef; season to taste with salt and pepper.
Pour into casserole.
Top with Parmesan cheese.
Bake in 375 degree oven for 30 minutes.
Substitute combined water, flour and bouillon cubes or packaged gravy mixture or leftover gravy.
