3 tablespoons lard
 
1 tablespoon chopped celery
 
1 large onion, minced
 
1/2 teaspoon salt
 
2 cloves garlic, minced
 
1/8 teaspoon black or white pepper
 
1 tablespoon flour
 
2 cups minced leftover meat diced
 
1 tablespoon parsley, minced
 
2 large potatoes, boiled and
 
2 bay leaves, chopped fine
 
1 sprig thyme

Directions

Melt the lard in a pan, add the onion and garlic, fry until brown.
Stir in the flour until it is brown, add the meat and diced potatoes.
Add all other ingredients and 1/2 cup cold water.
Cook, stirring to keep the hash from sticking to the pan, until the mixture is dry.
The hash is now ready to serve.
