Leeks With Cheese Recipe
Ingredients
4 leeks
Salt
1 oz. butter
2 tablespoons flour
1/2 pint milk
3 oz. grated cheese

Directions
Trim the roots and green part from the leeks.
Wash very thoroughly, then cook in boiling salted water for 10 minutes or until just tender.
Drain and arrange in a shallow 2 pint (5 cup) ovenproof dish, reserving 4 tablespoons (5T) cooking liquor.
Make a roux with the butter and flour, blend in the milk and reserved cooking liquor and bring to boiling point, stirring.
Add most of the cheese and season well.
Pour the sauce over the leeks and sprinkle with the remaining cheese.
Cook under a medium grill (broiler) for about 5 minutes.
