Ingredients

 
4 medium-sized leeks
 
1/4 cup (60 mL) hot water
 
1 tbsp (15 mL) cornstarch
 
2 tbsp (30 mL) soft butter
 
Juice and rind of 1 lime or 1 small lemon
 
1/2 tsp (2 mL) salt
 
A good pinch of sugar

Directions

Clean the leeks.
Remove outer leaves and cut off half the green tops (can be used for soup or stew).
Split the remaining green part in two from the white part up.
Wash under running water, letting the water rush through the leaves, where sand is usually lodged.
Drain well.
Place the whole prepared leeks in an 8-inch (20 cm) square or oblong ceramic dish.
Pour the hot water on top.
Cover dish with waxed paper, microwave at HIGH 7 to 8 minutes.
Let stand 2 minutes.
Remove the cooked leeks to a platter.
Mix together the cornstarch, soft butter, juice and rind of the lime or lemon, salt and sugar.
Add this mixture to the water used to cook the leeks remaining in the dish.
Stir well.
Microwave at HIGH 3 minutes.
Stir well.
If too thick, add a bit of water.
Stir well.
Micro wave again 1 or 2 minutes at HIGH.
Stir well and pour over the cooked leeks.
To reheat, if necessary, microwave about 1 minute at MEDIUM.
