Leeks With Tomatoes And Basil Recipe
Ingredients
| Basil Butter | ||
| 4 tablespoons butter or margarine, at room temperature | ||
| Basil | 1 Tablespoon, minced | |
| 4 medium-sized leeks, trimmed | ||
| Extra virgin olive oil, for brushing leeks | ||
| Garlic | 1 Clove (5gm), minced | |
| Lemon juice | 1 , squeezed | |
| Tomatoes | 2 Large, sliced | |
| Parsley | 2 Tablespoon, minced | |
| Salt, pepper, and dried oregano to taste | ||

Directions
To prepare basil butter, soften butter in a bowl, using the back of a spoon or use a food processor fitted with steel blade.
Mix in basil.
Set aside.
Cut leeks in half horizontally and brush with olive oil.
Preheat stovetop grill.
Grill leeks over medium heat, cut side down, for 2 minutes.
Turn leeks over and continue grilling for 1 to 2 minutes.
Leeks should char slightly and be fork tender.
Remove leeks to a serving dish.
Sprinkle with garlic and lemon juice.
Surround leeks with sliced tomatoes.
Dot leeks with basil butter.
Sprinkle with parsley.
Season to taste with salt, pepper, and oregano.
