Leeks Au Gratin Recipe
Ingredients
| Leeks | 8 | |
| Butter | 2 Ounce | |
| Cornflour | 2 Ounce | |
| Milk | 1/2 Pint | |
| 4 oz. grated cheese, Gruyere or Cheddar | ||
| Black pepper salt | 1 To taste | |
| Mustard | 1/2 Teaspoon (Leveled), made | |
| Lemon juice | ||
| Breadcrumbs | 2 Tablespoon | |
| Butter | 1 Teaspoon (Leveled) | |
Directions
1. Prepare and wash the leeks thoroughly then cook in boiling salted water until just tender. Drain and put into a greased fireproof dish.
2. Melt the butter, add the cornflour and mix well. Cook for a few minutes, then remove from the heat.
3. Add the milk gradually, return to the heat, stir until boiling and boil for 1 minute.
4. Add cheese and continue cooking until it has melted, then season carefully with salt, pepper, mustard and a squeeze of lemon juice.
5. Pour the sauce over the leeks, sprinkle with the breadcrumbs and dot with butter.
6. Bake in a moderate oven (350°F - Gas Mark 4) until the top is golden brown.
