Leek Soup Recipe
Is it you or the aroma of Leek Soup that you are making that has dragged me to the kitchen?, were my partner's words. There is not a single month when I don't serve this yummy Appetizer! Serve this Leek Soup at the table today and watch it disappear in delight!
Ingredients
4 leeks, washed, sliced lengthwise, and cut into 1 inch pieces
2 tablespoons butter or margarine
2 large onions, chopped
4 cups chicken or beef broth
1/2 teaspoon salt
1 cup milk
1 cup diced ham
Directions
Wash leeks and cut into 1 inch pieces.
Melt butter in cooker; saute the leeks.
Add the chopped onions.
When leeks are soft, add broth and salt.
Close cover of cooker and put pressure control in place.
When pressure is reached, cook for 3 minutes.
Cool cooker at once.
Return open cooker to a low flame.
Add milk and ham; simmer for 3 minutes more.
Serve.
