Leek Salad Recipe

I put all my efforts in searching for a Low Calorie dish but of no use, then I finally got to know about this Leek Salad recipe. I will prepare this Leek Salad as Appetizer for a get-together I am soon going to host. This dish is a superior Low Calorie dish. I am certain both of us will concur that this Leek Salad is simply scrumptious.

Ingredients

 
1 lb leeks, white part only
 
2 tomatoes
 
Salt
 
Pepper
 
4 tbsp white wine
 
1/2 tsp thyme
 
1/2 tsp sugar
 
2 tbsp olive oil

Directions

Remove the base and the outer skin of the leeks.
Cut in half lengthwise, wash thoroughly and leave to drain.
Make an incision in the form of a cross in the top of each tomato.
Put in the microwave oven for 1 minute on HIGH.
Skin and chop coarsely.
Sprinkle salt and pepper in the base of a dish and arrange the leeks on it.
Pour the white wine over.
Cover with the chopped tomatoes.
Sprinkle with thyme and sugar.
Add more salt and pepper and sprinkle with olive oil.
Cover and microwave on HIGH for 15 minutes.
