Ingredients

 
1 medium sized onion, chopped
 
1 teaspoon olive oil or margarine
 
1 bunch leeks, washed and chopped
 
2 potatoes, peeled and diced
 
1/2 cup celery leaves
 
1 quart chicken broth
 
1/2 teaspoon salt
 
1/4 teaspoon nutmeg
 
1 cup buttermilk
 
chopped chives or parsley for garnish

Directions

Using a large soup kettle, saute onion in oil until limp.
Add leeks, potatoes, celery leaves, chicken broth, salt, and nutmeg.
Cover and simmer 15 minutes, or until potatoes are tender.
Cool slightly, then puree in a blender.
Mix in buttermilk and reheat until hot through.
Ladle into bowls or mugs and sprinkle with chives or parsley.
