Ingredients

4-5 medium leeks, white and pale green parts only cleaned and cut in half lengthwise and then into thin half moons
1/2 chopped shallot
1 clove chopped garlic
2 Tbs butter
1 Tbs olive oil
1 cup heavy cream
3 eggs
pinch of nutmeg
2 - 4 oz grated emmentaler cheese

How to make Leek and Cheese Pie

Melt butter and oil in a large skillet and saute garlic, shallots and leeks until softened and translucent. Beat eggs and cream in a large bowl and add nutmeg and grated cheese. Partially prebake pie crust, after pricking all over with a fork in a 350 oven for 10 mins.
Add leeks to egg mixture, and pour into pie crust. Increase oven temp to 400 F and bake pie for 30 mins. Remove from oven and let cool or a wire rack to set up for 10 mins.
