Leek Tomato Soup Recipe

Ingredients
2 large leeks, chopped (white and some green)
2 tablespoons butter
4 cups peeled and chopped ripe tomatoes
1 bay leaf
4 basil leaves
1 sprig tarragon
1/4 teaspoon each salt and black pepper
Pinch sugar
1/3 cup orzo, cooked al dente
Chicken or beef stock (optional)
Half-and-half cream (optional)
1 large tomato, peeled and diced
Minced fresh chives
Directions
Saute leeks in butter until soft.
Add chopped tomatoes, herbs and seasonings.
Cover, bring to gentle boil, lower heat and simmer 30 minutes.
Discard bay leaf and puree.
Reheat with orzo and stock or cream if thinner soup is desired.
Adjust seasonings and garnish with diced tomato and chives.
